Blueberry Coffee Cake

It's blueberry time and Im rolling in them. Im always looking for new blueberry recipes and I was thrilled when I found this cake in one of my 200 recipe books! I made it today and promptly froze all but one piece. I have a lot of drop in visitors and I like to keep baked things handy in my freezer for those emergencies. So without further ado I will share with you this yummy, moist cake just in time to use up those hoards of berries. This isnt the quickest recipe but it's not hard either. Have fun and enjoy!



2 1/3 cups flour
1 1/3 cups plus 2 T. of sugar
1/2 tsp salt
3/4 cup Crisco
3/4 cup milk
3 eggs, divided
2 tsp baking powder
1 tsp vanilla
1 cup of ricotta cheese
1 T finely grated fresh lemon peel
1 cup fresh or frozen blueberries
1.2 cup chopped walnuts
1/3 cup packed brown sugar
1 tsp cinnamon

Preheat oven to 350'. Grease 9x13 in pan; set aside.

Combine flour, 1 1/3 cups of sugar and salt in bowl. Cut in shortening until crumbly. Reserve 1 cup of mixture for topping. Add milk, 2 eggs, baking powder and vanilla to remaining mixture. Beat at medium speed 2 minutes, scraping bowl. Spread in prepared pan.

Combine remaining ricotta cheese and lemon peel in bowl. Mix well. Sprinkle blueberries over the batter in pan. Spoon cheese mixture evenly over berries.

Mix reserved crumb mixture, nuts, brown suagr, and cinnamon. Sprinkle over cake. Bake at 350' about 45 minutes.

I love the idea of having some frozen for when company comes. How though do you get it defrosted to feed to people?

I cut in individual pieces and put it back in the form of a cake. Then when I pull it out I microwave each piece to make the cake warm just like it would be straight from the oven. Also if you just have one or two guests you can just pull out those individual pieces.

I always have cookies, and cakes and breads in the freezer. Its a big help when you get busy and dont have time to make things.

Oh, I desperately wish blueberries would grow in Colorado but they require acidic soil and even the water here is often too alkaline, even when you adjust the soil.

I have planted some Saskatoon blueberries, not true blueberries but they're supposed to taste a similar to them. The plants are still tiny but maybe a few years I'll get close enough.

I can remember my stepmother making a blueberry thing when I was a kid - it had something to do with dumplings and blueberries and sauce... it was tasty, I remember liking it a lot.

I wonder if it was like a blueberry buckle or maybe the blueberries were a syrup poured over something. Whatever it was it sounds good.

I want to add that when you freeze this put the cut pieces back into the shape of the cake and wrap the whole thing tightly for the freezer. By placing the pieces back together you dont risk the cake drying out in the freezer. When the inside of the cake is exposed the freezer can dry it out quickly if not stored properly.
