Hamburgers and Meat Pockets

This past weekend the temperatures stayed in the low 80's. I used this cool time to catch up on some more baking. I've been dying to make these little stuffed meat sandwiches but I'm not going to have the ovens on that long when I'm running the air conditioner so I had to wait until it was a little cooler outdoors. Every day when the kids would start getting hungry Id ask myself why under the sun didn't I have these things made ahead of time. Well now they are made and I've frozen a bunch for future use.

I thought I would give you all a picture tutorial of how to make your own meat pockets. I use any dinner roll recipe I have around. It's not important that you use a special dough. Once you've raised your dough to the right amount you punch it down and pull off enough to make a normal size dinner roll. Roll dough into a ball, and then flatten on the counter. Some women roll the dough with a rolling pin and cut with a round cutter. I don't do that. I just roll the dough in the palm of my hand and then flatten. I make mine more oblong just for a different look. Dough is fun to play with!


After you flatten your dough fill with a meat mixture. This stuffing is fried ground beef with pizza sauce and cheese in it.

The secret is to get enough meat without getting too much that you cant pinch it all in. If you don't get enough meat the roll is too dry. So fill it with meat then pinch the ends together and lay edge down on the pan. You will notice in the pic that the meat is showing through a couple of these. You really don't want that. I went back through and sorta fixed the couple that were doing that. That comes from the meat being hot and sorta melting the dough around it. On the other hand it only takes a little covering of dough. You want to avoid the dough being too thick at all costs.

Lay them on the pan and let them rise a second time. Again you don't want to let them rise until double like a usual dinner roll. Just let them rest about 15 minutes till they get a little puffy then bake at 350'.

Here are the finished meat pockets. They are oh, so yummy and oh, so handy to just hand a kid when you're busy. They're easy to eat on the run and to pack in lunches for picnics. Peter will come in from playing hard and grab one from the freezer, pop into the microwave for 30 seconds, and run back outside with it. No more junk food!


Saturday evening we were going over to Wendy and Edwards house for a BBQ so I just made the leftover dough into hamburger buns. Again you just flatten the dough and again you don't let it rise to double. Just raise it until it gets nice and airy but not high and puffy. I made some with sesame seeds and some without.

And here are the finished hamburger buns. To make hot dog buns you just shape them differently. Now go have a picnic!

Thank you! I've been meaning to make pizza pockets but hadn't tackled it yet. I have made hamburger buns but didn't know to only let it rise partway.

Love this idea.

Can I make regular bread dough in my bread machine and use that once the dough is done? I don't cook my bread in the machine. I just let it do the hard work and I pull it out and put it in bread pans. Cheating I know.LOL
Love the buns also. Would have been great tonight for the cook out.

I'm going to try this. I have such a picky eater and still need lunch ideas for school. This may be one we can work with.

Yes you could use regular bread dough but you will lose some of the taste. Picture a hamburger on bread or a hamburger on a bun. There is a difference in the taste and the texture. So of course you can use bread dough but you will lose some of the quality and the essence of a bun if you get what I mean.

Cool! I've never seen anyone make those pockets homemade before - just the kind in the store...homemade probably tastes 200% better though! I bet my kids would like them - but having never made *any* kind of bread/buns before, I might wait until I try that out a few times LOL (I've done biscuits - tea biscuit things - but never bread or buns)....

Love it. I have seen the recipe's and heard of people doing this but I never knew anyone adventurous to. Good for you. I would also love the recipe...for both of course. My son once made pockets and had a blast with them, I wonder why we stopped such a great idea especially to use up leftover's. Give's them a whole new dimension.

No fair. I need dinner ideas for tonight and I see these yummy looking options only to find no recipe. I want the meat pockets. I think the kids would love those.

Have you ever made the BBQ biscuit cups? I like those. Biscuits smushed into a cupcake pan filled with BBQ meat and cheese on top, baked until biscuit is done. I used to have a great homemade recipe for the meat and everything but I get lazy and use the jar sometimes.

Okay you could use pizza dough but pizza dough wont puff into nice rolls like this. Youd just ahve a flat type of thing.You could also use pie crust and do turnover type things. Theres no end to fillings you can use for these. Just make sure you dont have a gooey filling or the inside of you roll wont get done right. It will stay doughy.

And yes, konk, I have made the biscuit ones. They are definitely faster and quick to whip up for dinner. These take a lot of time because the dough has to raise.

You are some amazing woman. "Just use any dinner roll recipe that you have around!" I made dinner rolls around 1970 I think!!! I love the way you make it sound so easy. My version would have to be canned croissant rolls! Hurry for pillsbury for the Dummies in the kitchen!

Pj I need reminded that not everyone just has a dinner roll recipe around. LOl I think that is where the disconnect comes in when I'm posting this stuff. I just forget that not everyone knows what Im talking about. Im just not thorough enough in my instructions. LOL

YUM! These look great. I love meat pies. My British grandma made Cornish pasties. They were similar, meat cooked with some veggies, and instead of a bread dough, it was pasty. Those are good, and I love having another meat pie recipe! Thanks :)

I made a batch of these and the children ate every bit. I made a mexican filling with ground beef,refried beans,picante sauce and cheese. I want to try a pizza filling too.
Wouldn't this make a nice gift for a busy mom? Our minister's wife just had a baby and I'm thinking this would make a handy freezer filler for her. Thanks for such a great idea.
